Getty ImagesIt's easy to assume Florida Gulf Coast coach Andy Enfield's life is pretty good right now with his Cinderella team Sweet 16-bound and the darling of this year's NCAA tournament.

As it turns out, Enfield's life has been pleasant for some time now. We told you earlier Enfield is married to a former sueprmodel turned stay-at-home mom by the name of Amanda Marcum, who is used to the spotlight having been on the cover of Vogue, Maxim and Elle. That's not to mention her Victoria's Secret ad, among others.

Ten years ago, Enfield gave Marcum a ride from New York to Boston so she could watch her beloved Oklahoma State Cowboys play a second-round game in the NCAA tournament. The pair hit it off on the ride, went on their first date a few days later (to a St. John's NIT game) and were engaged in six months.The one little detail that was left out of the couple's touching love story is is purely fitting with FGCU's underdog story.
That first date at the St. John's NIT game didn't end with a candlelight dinner. Instead, it ended with the most romantic place in all of Queens: Taco Bell.

Taco Bell was the only restaurant open late. "I got her a nice burrito, and we sat behind the bench," Enfield told Newsday for the quote of a century. "I figured if she still likes me after Taco Bell and a basketball game . . . "
You hear that, kids? The key to marrying a model is one Mountain Dew Baja Blast and a fourth meal away. That and an NCAA tourney run for the ages. Marcum would be perfect for commercials with that little chihuahua "Yo Quiero Taco Bell" dog.
This story gets better. When CBS was introducing Marcum for a feel-good segment during FCGU's stunning win over Georgetown, it was revealed that he proposed to her in the most underdog way possible. Here's the rehashing of the proposal, told by CBS' Lewis Johnson:
"Get this, the ring was squeezed in between two Krispy Kreme donuts...inside the box. Nine years later, modeling career over and nine years later they have three kids. She looks happier than ever, I guess she looks like a model wife."
